The 365 Project: Day 206 (July 26th)

This is really more of a wintertime meal, but you make do with what's in the fridge. And what's easy. Besides, it's been a wintery kind of summer around here anyway!

The meat/sauce is a variation of Beef Tips and Artichokes with Merlot and Black Pepper Gravy, one of my favorite recipes from Sandra Lee's Semi-Homemade 20 Minute Meals. (Yes, I still eat my fair share of packaged foods. Baby steps.) Our take on the recipe this time around:
  • 1 pkg Tyson beef tips with gravy
  • 1/2c red wine
  • frozen asparagus, chopped
  • steak seasoning & cracked black peppercorns
Boil wine 4-5 minutes, or until reduced by half. Add remaining ingredients and cook until heated through.
