Raf's love for pickled carrots certainly rivals Gina's, so I'm pretty sure I would have had divorce papers on my hands had I not saved some for him. He cracked open a jar tonight to give them a try. Thoughts? Not too shabby! Not the jalapeno, onion mix he's used to enjoying with a super burrito, but still yummy. Although, after 1 day, they're still quite crunchy. Which I kinda liked, but if you're looking for a traditional, softer version, it probably needs a few more days of soaking. He had some leftover onion handy from taco dinner, so he added those for an extra kick.
